FRIDAY 3rd April – Cup-o-banoffee !

INGREDIENTS LIST
I’m not one to do many sweet dishes; but since it’s friday these little banofee cups are a real treat and a great pudding to save for after dinner (you won’t last till after dinner!)
Makes 4
What you need:
- 4 small coffee cups (or just be greedy and use a teacup!)
- Electric whisker or hand whisk (it’s so much easier with an electric one!)
- Mixing bowl
- Frying pan
Ingredients:
- 4 digestive biscuits
- 2 bananas
- 4 tbsp sugar (whatever you’ve got – I’ll use caster sugar)
- 6 tbsp butter
- 300ml double or whipping cream (Elmlea do a vegan one if you want)
- 2 tbsp icing sugar / honey for the whipped cream
- Optional – few drops vanilla essence
- Optional – Pinch ground cinnamon
- Optional – Pinch cocoa powder (or hot chocolate powder or grated chocolate)
