Our One-Pot Chinese Rice
My kids love this because it’s a little sweet and savoury and I love it because it’s packed with vegetables and it only uses one pot to make!
We’ll be making these with chicken breast but you can easily swap this for fish or vegetables!
SERVES 4

What you need:
- Chopping board
- Saucepan with lid
Ingredients:
- 300g diced chicken breast (or any other ‘main ingredient’ you want)
- 1.5 cups basmati rice
- 3 cups chicken stock (stock cube + boiled water)
- 1 small onion diced
- 2 cloves garlic sliced
- 2 inches ginger diced
- OPTIONAL – 1/2 cup frozen peas
- OPTIONAL – brocolli florets
- OPTIONAL – fresh coriander
Sauce:
- 4 tbsp dark soy
- 1 tbsp honey
- 1 tbsp vinegar
- OPTIONAL – sesame oil and/or chinese five spice
