Easy Homemade Blueberry Muffins

These blueberry muffins are a real treat!

I love blueberry muffins and this is a great Friday treat to have! Which incidentally works great as a naughty breakfast treat on Saturday morning!

SERVES 4 

Serving Suggestion:

  • Glass of milk!

What you need:

  • Muffin Tray
  • Mixing bowl
  • Pre-heated oven 200cFAN

Ingredients:

  • 140g plain flour
  • 140g butter, softened
  • 100g caster sugar
  • 2 eggs
  • Few drops vanilla essence
  • 1/2 tbsp baking powder
  • 150g blueberries (I’ll use frozen for convenience!)

Easy blueberry muffin recipe!

Ingredients
  • 140g plain flour
  • 140g butter, softened
  • 100g caster sugar
  • 2 eggs
  • Few drops vanilla essence
  • 1/2 tbsp baking powder
  • Handful blueberries
Directions
  • Step 1 Pre-heated oven 200cFAN
  • Step 2 Cream together the butter and sugar and then add one egg at a time, incorporating fully as you go.
  • Step 3 Fold in the flour and baking powder and add the vanilla essence.
  • Step 4 Fold in half the blueberries and put a dessert spoon of mixture into each muffin case.
  • Step 5 Bake in the oven for 15-18minutes until cooked. Leave to cook before eating in one go!
