I was privileged to be invited to perform a cooking demonstration with chef Nigel Brown at the Harpenden and St. Albans Food and Drink Festival. I decided to add a bit of sunshine to the day with my Greek inspired Seafood Paella – gorgeous!

What a great day! Tons of awesome food, great local suppliers showcasing their wares and lots of expanding waistlines after gorging on so much nice grub!
I created a gorgeous Greek style seafood paella that went down a treat with the local residents and is a delicious dish to make at home (click here for the recipe and watch me cooking it). It has accents of anise through the dash of Ouzo and uses Orzo rice for a totally different texture and flavour. Nigel Brown is a great chef and brilliant to have on stage with me – you can read more about him here.
And it’s been a busy month! I’ve also been asked to perform another wonderful Greek inspired dish on Saturday 11th October at the Hertford Food Festival at 4pm (and do the odd bit of compereing) – come along and say hi! I also owe a big thank you to the Harpenden and St. Albans Food Festival team for their help – cheers guys!.

After cooking my seafood Greek paella, my nerves kicked in as my biggest and toughest critic gatecrashed the stage to taste my dish. I always know with this particular critic she never holds back in giving an honest opinion. It was tense, you could cut the atmosphere with a spatula.

As I held my breath waiting for the verdict a long ‘mmmmmm’ echoed from her mouth I could breath again! I’m sure she gets her brutally honest trait from her mum 🙂
