How to make an omelette

  • 2 eggs pp
  • Handful grated cheese
  • Knob butter
  • 4 tbsp diced veg (onions, courgette, mushrooms)
  • Step 1 Fry the veg in a little olive oil until softened then remove. Whisk the eggs, season generously and reserve.
  • Step 2 Add a knob of butter to a hot pan, once melted, pour in the whisked eggs and gently pull the edges towards the centre as it cooks then tilt the pan to fill the ‘void’ with the egg.
  • Step 3 Once it starts to solidify, add the toppings in a line, including the cheese and fold one side of the omelette edge over.
  • Step 4 Tilt the pan and pour it onto a plate.
  • Step 5 Dress with a little sriracha if you like heat!
