Omelettes are so easy to make and the perfect all round breakfast and lunch (hell, even dinner) option. You just need to know how to make an omelette properly!
How to make an omelette!
I asked whether everyone wanted the cookalongs to be 3 or 2 times a week and literally thousands have said 3 times – so this one is short notice but but simple and delicious..
This will be your masterclass in how to make an omelette, perfect at anytime of day.. topped with a tomato salsa and a delicious filling (of your choice!)
Serves 1 (you need to make an omelette each or split one between little kids)
What you need:
- – 2 eggs pp (kids could have 1 egg)
- – handful grated cheese
- – nob butter
- – any veg you want (mushrooms, courgette, anything)
- – meat or fish – optional (cut sausages, ham, tinned tuna, doesn’t matter..)
Topping:
- – couple small tomatoes
- – onion (about a tablespoon, chopped – or use spring onion or leave out)
- – chopped fresh herb (parsley, coriander, mint, anything)
- – chili for the grown ups!
Equipment:
- – mixing bowl x2
- – fork
- – non-stick frying pan
- – chopping board and knife (kid friendly)

Ingredients
- 2 eggs pp
- Handful grated cheese
- Knob butter
- 4 tbsp diced veg (onions, courgette, mushrooms)
Directions
- Step 1 Fry the veg in a little olive oil until softened then remove. Whisk the eggs, season generously and reserve.
- Step 2 Add a knob of butter to a hot pan, once melted, pour in the whisked eggs and gently pull the edges towards the centre as it cooks then tilt the pan to fill the ‘void’ with the egg.
- Step 3 Once it starts to solidify, add the toppings in a line, including the cheese and fold one side of the omelette edge over.
- Step 4 Tilt the pan and pour it onto a plate.
- Step 5 Dress with a little sriracha if you like heat!
