A deliciously heady mixed spice Christmas cake with nutty walnuts, hint of dark chocolate and brandy. Serve with a decent dollop of brandy cream!
Christmas Pudding – Mug Cake Recipe
Ingredients:
1 egg
1tbl oil
2tbl milk
1tbl brandy
1tbl marmalade
½ tsp mixed spice
2tbl plain flour
1tbl cocoa powder
2tbl brown bread crumbs
1tbl caster sugar
Few drops vanilla essence
½tsp baking powder
1tbl walnuts course ground
Garnish:
3 walnut halves
Dusting icing sugar
Few grates orange zest
½ tbl brandy
Method:
- Add the egg, oil, milk, brandy and marmalade, mixed spice to a mug and whisk thoroughly.
- Add the rest of the ingredients and combine well.
- Microwave uncovered for 1.5 minutes.
- While resting, garnish with few walnut halves, grates of orange zest, a drizzle of brandy and finally dust with icing sugar.
This looks great! – we’re going to try these with our Beaver scouts – if they haven’t got a microwave, how long and what temperature do you recommend for a conventional oven please so they can all do these – we’re going to be doing them via zoom!
Hi Ruth, that’s so cool! I hope your Beaver Scouts enjoy it! If they haven’t got an oven you can try in a similar size vessel at 200FAN for about 20 minutes – but I’m not 100% as this recipe was specifically developed to be cooked in a mug in a microwave!
Thanks Theo, the Beavers had a great time making these – several said they looked revolting whilst mixing them up but then when they cooked couldn’t wait for them to cool down enough to eat them!! – the ones that did them in the oven seemed to do well too. would send photos but don’t think i can on here! do you do an Easter version with marzipan? – will have to have a play and see if we can jusgle this to make one 🙂
