Sausage Tray Bake is a great recipe to feed the family!

I wasn’t planning on making a sausage tray bake, but dinnertime came around and I found myself staring at a dozen sausages and the words ringing in my ears “can you have dinner ready for 4.30”.. It was 4pm – a sausage tray bake was happening!

Firstly, I love a good tray bake to feed the family, everything going into one tray, whack it in the oven and about half hour later you have dinner.. hardly any washing up, hassle-free to make, they’re ideal for a quick dinner. Combine that with the fact everyone in our family loves a good sausage; a sausage tray bake was a no brainer.

I should emphasise you can really freestyle your own sausage tray bake recipe as much as you want, ultimately I find it best to include some carbs (usually small diced potatoes that cook in half hour), lots of veg to get the kids eating something other than meat and spuds and then the sausages on top.

I think the thing that really worked for this sausage tray bake was the addition of half a tin of chopped tomatoes and pinch of smoked paprika; it just brought everything together quite nicely.

Sausage Tray Bake Recipe - couldn't be easier!

Ingredients
  • 1kg new potatoes, cubed 1/2 inch
  • 3 red onions, sliced thick
  • 1 head broccoli, broken into florets
  • 100g fine beans
  • 2 cloves garlic, sliced
  • Generous drizzle olive oil
  • 1 cup / 250ml tinned chopped tomatoes (half a tin)
  • 1 tbsp dried oregano
  • 1 tbsp smoked paprika
  • 12 sausages of your choice!
Directions
  • Step 1 Preheat oven to 200cFAN
  • Step 2 In a large roasting tray add all the ingredients except the sausages and tinned tomatoes, and mix together.
  • Step 3 Then spoon over the chopped tomatoes and finally put the sausages on top (we do this so they go nice and brown and don’t poach in the liquid if put in earlier).
  • Step 4 Drizzle a little olive oil over the sausages and season generously with salt and pepper.
  • Step 5 Whack in pre-heated oven for 30-35 minutes and then stick in the middle of the table and help yourselves!
