Lemon Garlic Dressing | Lemon Vinaigrette

My Lemon Garlic Dressing aka a basic Lemon Vinaigrette recipe with the addition of some herbs. 

My lemon garlic dressing or lemon vinaigrette is packed with big headline flavors; garlic, lemon and a herb – if I’m using this dressing on meat I tend to use rosemary, if I’m using it with fish then I’ll go with parsley or coriander.

A good lemon vinaigrette is like a Little Black Dress – it’s perfect for every occasion (NB. I don’t wear little black dresses).

It really is a great dressing to have under your belt as it just brings food to life. Essentially this is a lemon vinaigrette which genuinely works wonders on a ton of different dishes; it can be used as a marinade, a condiment or simply drizzled over a gorgeous piece of BBQ’d meat or fish (and don’t forget the salads, it makes a great salad dressing recipe).

I personally use this lemon garlic dressing for grilled mackerel but would also go great on my grilled sardines or BBQ lamb ribs. I usually play around with the herbs and maybe add the odd ingredient here or there; but fundamentally, if you ensure you add an equal quantities of lemon juice, extra virgin olive oil and garlic – you’ve got it made.

It is the holy trinity of Greek cooking! So my advice is this; make jar full, use it a lot and enjoy!

Lemon Garlic Dressing (Lemon Vinaigrette Recipe) – Ingredients:

3 heaped tbl fresh herbs (Rosemary for meat, Parsley for fish)

1/2 tbl dried oregano

1 tsp salt

Dozen grinds black pepper

Pinch sugar

Zest 1/2 lemon

Juice 1 lemon

Extra virgin olive oil – equal amount to lemon juice

Pinch of Chilli flakes

Couple cloves of garlic (whole – lightly crushed)

6 cloves (optional – mainly used for marinating lamb, otherwise you can leave out).

Method:

This couldn’t be simpler – mix all the ingredients together.

Put it in a jar, tighten the lid and give it a good shake (ideally to music, holding the jar with two hands to the side of your head) 🙂

Goes amazingly with BBQ lamb, pork chops, grilled mackerel, chicken or as a simple salad dressing.
