You’re getting two recipes in one on this blog post, you’re getting my Jerk chicken marinade and my jerk sauce recipe! I’m such a giver… 🙂
Basically, you make the jerk marinade which you can use to marinade jerk chicken, but by simply adding a few more ingredients and cooking the marinade you can transform it into a delicious (and less sharp) sauce.

Make your jerk sauce, pop it in a jar and store in the fridge (you can even freeze some for another day).
How to make Jerk Sauce – Ingredients:
(this is the jerk marinade part!)
1 whole scotch bonnet chilli
1/2 red bell pepper
8 cloves garlic
3 inches fresh ginger
6 spring onions
1.5 teaspoons ground allspice
1 teaspoon salt
10 black pepper corns
3 tablespoons soft brown sugar
Juice 1 orange
Dash of vegetable oil
1/3 cup dark soy sauce
8 sprigs of thyme (about 1 tablespoon of leaves)
1 bay leaf (stalk removed)
1/2 teaspoon ground cinnamon
(this is the jerk sauce recipe extra ingredients)
1 tablespoon honey
1 tablespoon ketchup
2 tablespoons fresh coriander
1/2 cup water
Jerk Sauce Recipe – Method:
- Blend all the marinade ingredients together till smooth (you can now marinate your chicken in this, or…).
- Add the additional Jerk Sauce ingredients to the marinade and heat in a saucepan and bring to a boil then reduce to a simmer for a few minutes until the mixture has thickened and turned a darker shade.
