My fig and feta salad just feels like summer! This feta recipe is laced with ripe figs, pomegranate molasses for a little sweet/sharp action with walnuts and cos lettuce. It’s seriously delicious – but don’t take my word for it – make it yourself!
Look at the size of these beauties! Well we couldn’t let them go to waste. My wife doesn’t usually enjoy figs but even she was converted by my fig and feta salad!
Fig and Feta Salad Recipe
Serves 1
NOTE: depending on the brand of pomegranate molasses you use; they sometimes come out sweeter or sharper; if it’s too sharp, add a teaspoon of honey to the finished dish. I use Odysea brand which is perfectly balanced in flavour.
Ingredients – serves 1
- 1 large ripe fig cut into eighths or 3 small ones quartered
- 50g feta cheese
- Couple Romain lettuce leaves ripped (or rocket)
- Handful grapes, halved
- Couple sprigs fresh coriander, chopped
- Handful walnuts, lightly broken
- 1 tbsp extra virgin olive oil
- 1 tbsp pomegranate molasses
Method
- Simply place the ripped lettuce leaves on a plate, scatter the remaining ingredients over the top then drizzle the olive oil and pomegranate molasses over the top.

Seems like there is another ingredient in the photo of your fig salad that is not listed in recipe. Could it be bacon bits or some sort of cold cut broken into pieces (like salami ??).
Well spotted! It was chorizo, but actually it didn’t need it so I left it out of the recipe!
