Watermelon Feta Salad Bowl – amaze your friends! | Greek Recipes

Watermelon Feta Salad served in the watermelon – a watermelon bowl if you like! Using the watermelon as the serving bowl makes this one of my favourite Greek salad recipes (mainly ’cause I have less to wash up at the end!).

My watermelon feta salad recipe, using the watermelon bowl looks brilliant, tastes delicious and is the perfect dish to share with friends or family – it begs to be placed in the middle of a table to be adorned by everyone and just let everyone help themselves!

This super refreshing watermelon feta salad recipe touches on lots of traditional Greek flavour combinations and is one of my go-to BBQ salads when you want something a bit different.

Watermelon Feta Salad Ingredients:

1 whole watermelon

1/2 packet Feta cheese (about 80gms)

1/2 packet Halloumi (about 80gms)

Juice 1/2 lemon

Zest of 1/2 lemon

Few sprigs of mint chopped

Tablespoon dried oregano

Few grinds of pepper

Drizzle of olive oil

Watermelon Feta Salad – Method:

  1. Cut the top third off the watermelon and using a large spoon just start to scrape out the flesh from the watermelon both from the large bottom half and the top half.
  2. Then just roughly chop up of the watermelon flesh (remove most of the seeds) and put into a large bowl or saucepan. Roughly chop up the Feta cheese, Halloumi cheese (you could grill the halloumi to add a nice taste dimension or just keep raw) and add the lemon zest.
  3. Now sprinkle in the chopped mint and oregano and give it a squeeze of lemon juice and a drizzle of extra virgin olive oil. Lightly season with the pepper (I don’t add salt as the Feta and Halloumi are quite salty). Once done give it a gentle mix with your hands and then tip back into the hollow watermelon shell.
  4. Give it another little drizzle of olive oil and serve.

Goes well with BBQ’s or a refreshing winter lunch and lots of ‘ooohs and aaaahs’ and ‘isn’t that clever’!

Oh, and for a great watermelon cocktail; if the watermelon is ripe you’ll get lots of juice as you cut it up; pass this through a sieve, add a shot of vodka, few mint leaves and a touch of brown sugar and voila! Cocktails as well!
