Microwave Salmon – cooking fish in microwave in 3 minutes flat, one of my favourite microwave fish recipes (I always say that..)

My microwave salmon is one of the easiest microwave fish recipes I’ve done. Obviously cooking fish in microwave is going to be extremely quick but in this instance it’s really healthy aswell which is why I really like cooking fish in microwave in general.

Microwave salmon (one of many microwave fish recipes!) is a really clever way for cooking fish in microwave and keeps the microwave salmon super moist (just don’t overcook it!), it holds all that lovely flavour in and in essence, cooking fish in microwave is actually steaming the fish with the residual juices from the other ingredients (in this case the juice from the marrowfat peas) and the liquid content of the fish itself.

This is why cooking fish in the microwave or any microwave fish recipes means the fish stays moist and as long as you don’t overcook it you’ve got a super quick and healthy fish supper on your hands! I used a microwave with a power wattage of about 900W – if yours is less then you’ll need to microwave salmon for a fraction longer (try 30 seconds then have a peak) and obviously if yours is 1000W or more then try 30 seconds less.

Microwave salmon cooked in 3 minutes!

Microwave salmon is an easy dinner recipe for parents to whip up, I particularly like this recipe as it’s nice and fresh and has a slight South of France feel to it. Microwave Salmon Recipe:

Microwave Salmon

Ingredients
  • 1/2 tin Marrowfat Peas
  • 1/4 courgette diced into 1/2inch squares
  • 5 baby plum tomatoes cut into quarters
  • 1/2 clove garlic - finely sliced
  • Squeeze fresh lemon juice
  • 2 tablespoons chopped fresh herbs (parsley, coriander, basil, etc. work well)
  • 1 small fillet of salmon (skinned)
  • 1 green chili chopped
  • Seasoning
  • Few glugs good quality extra virgin olive oil
Directions
  • Step 1 In a bowl, add the 1/2 tin marrowfat peas (including about 1/2 of the juice), courgette, tomatoes, garlic, herbs and garlic.
  • Step 2 If cooking this for adults
  • Step 3 add the chilli and seasoning, if just for the kids you probably want to leave the chilli out!
  • Step 4 Once mixed together, place the fillet of salmon on top of the vegetables, spoon some of the juice over the top of the salmon.
  • Step 5 Cover with clingfilm (pierce with fork a couple of times) and pop into the microwave for exactly 3 minutes. Once done, taste and add the squeeze of lemon, season and a drizzle of extra virgin olive oil.

1/2 tin Marrowfat Peas
1/4 courgette diced into 1/2inch squares
5 baby plum tomatoes cut into quarters

Squeeze fresh lemon juice
2 tablespoons chopped fresh herbs (parsley, coriander, basil, etc. work well)
1 small fillet of salmon (skinned)
1 green chilli chopped (leave out if making for children!)
Seasoning
Few glugs good quality extra virgin olive oil

Microwave Salmon – Method:

  1. In a bowl, add the 1/2 tin marrowfat peas (including about 1/2 of the juice), courgette, tomatoes, garlic, herbs and garlic. If cooking this for adults; add the chilli and seasoning, if just for the kids you probably want to leave the chilli out!
  2. Once mixed together, place the fillet of salmon on top of the vegetables, spoon some of the juice over the top of the salmon and then cheat!
  3. Cover with clingfilm (pierce with fork a couple of times) and pop into the microwave for exactly 3 minutes. Once done, taste and add the squeeze of lemon and a drizzle of extra virgin olive oil.

Goes well with screaming kids!
