A quick word on lentils. Yes they’re very good for you, yes they are trendy, yes no self-respecting gastro establishment would be seen dead without a lentil salad on the menu. But I still remember my mum cooking them 30 years ago and I thought they were the work of the devil!

Lentils on their own I don’t enjoy much; they need a little love, a little dressing and they become quite exquisite.

To make life easy I use tinned green lentils for my lentil salads; they’re cooked, cheap and easy.

Plus it means you don’t have to cook anything to make this lentil salad recipe – so it’s great for a last minute lentil salad to make (you should always have a few tins of lentils lurking in the back of your cupboards).

Tinned green lentils only need a quick rinse and you’re ready to go.

Here’s my recipe for my Greek lentil salad.

Greek Lentil Salad Ingredients:

1 tin of green lentils, rinsed.

1/2 a pink grapefruit – segments removed

4tbl pink grapefruit juice 

Small handful of chopped herbs (parsley, coriander, basil, mint – whatever you can get)

1 red chilli sliced

60ml extra virgin olive oil

30ml cider vinegar

1 lemon

50g Feta cheese crumbled

1/2 red onion thinly sliced

Method:

(this is so easy it’s almost embarrassing)

  1. Add all the ingredients together and combine.
  2. Taste for balance of flavors adding more vinegar or lemon if it needs to be sharper or olive oil to reduce sharpness.
  3. And it’s that easy.

Told you it was embarrassing…

P.S. If it’s too sharp for your taste; stir in a teaspoon of honey.
