Banana Bread recipes are made for using up ripe bananas.

As much as my wife won’t admit it; she can be a pretty mean cook – and her easy banana nut bread recipe is just divine!

Banana’s are great – they’re good for you, look kinda cool and whenever my kids say they are hungry approximately 2.36 minutes after eating dinner – I point to the bananas.

But.. one minute they are yellow and beautiful, the next they are brown curled sacks of pureed banana flesh.

Which is the perfect time to be using up ripe bananas! And the riper the better, seriously, when they go totally brown and soft they are at their very best to be used in banana nut bread.

We first got hooked on banana nut bread when travelling through Bolivia; I know, not normally associated with banana nut bread.

But before I get on to that – here’s a quick life hack:

We were staying in a little place called Rurrenabaque which was our departure point for travelling into the Amazon. While staying there these lovely old ladies would push their carts of freshly made banana bread around the streets for all us lazy travelers to indulge in.

I don’t know if they were exactly Banana and Walnut Bread, but it was bread, definitely made from bananas and they had crunchy bits in it. Either walnuts or crickets 🙂

Needless to say by the time we got back to the UK we were already missing our daily consumption of banana nut bread.

So Anna got on the case and has now perfected her super easy banana nut bread recipe. Obviously we are not the first to create an easy banana nut bread recipe (!) nor will we be the last; but I can safely say if you are looking for a recipe for using up ripe bananas and love banana nut bread you’ve come to the right place.

Needless to say when we make this Banana Nut Bread with the kids we mash the bananas and cream the butter and sugar and then we just let the kids thrown everything into a big bowl and mix it like crazy. To be fair, it always comes out great. But if you want a little more structure to your easy banana nut bread recipe, here it is, in all it’s humble glory.

Easy Banana Nut Bread Recipe:

Preparation:

  • Line loaf tin with baking parchment.
  • Pre-heat oven 160c (FAN)

Banana Bread Ingredients:

  • 175 g butter
  • 175 g self-raising flour
  • 175 g sugar
  • 3 eggs
  • 3 ripe bananas
  • Few drops vanilla essence
  • 1 tsp ground cinnamon
  • 30 g broken walnuts

Method:

  1. Mash the hell out of your bananas (aim for a semi-smooth consistency) – reserve.
  2. Whisk eggs together – reserve.
  3. Cream butter and sugar together in a large mixing bowl.
  4. Add the flour and eggs in stages to the creamed butter sugar until fully incorporated.
  5. Add the mashed bananas and mix thoroughly before lastly folding in the crushed walnuts.
  6. Pour into lined loaf tin and bake for 1hour @ 160c FAN
  7. Let it cool and then eat! However, I dare anyone not to eat a slice while still warm!

Ingredients
  • Line loaf tin with baking parchment.

  • Step 7 Let it cool and then eat! However, I dare anyone not to eat a slice while still warm!
