Episode 4 – Giftwrapped Food Parcels!

INGREDIENTS LIST

This is epic – if there’s one you definitely want to join in with – this is it!

You’re basically going to place all the ingredients on top of each other, tie it up and pop it in the oven – it’s brilliant and something I’ve dozens of times, you can make a ‘grown up’ versions with lots of shellfish as a dinner party piece, but that’s for another day…

It looks like a lot of ingredients, but it’s not really, it’s just about getting whatever veg you can, some carbs and a piece of fish or chicken to top it off.

Makes 1 parcel

What you need:

  • 1 sheet baking parchment about 18 x 18 inches plus 12 inches natural string or use a stapler! (you can use foil if you don’t have baking parchment, you won’t need string with foil)

Ingredients:

  • 1/4 tin beans (not baked beans! Cannellini beans, kidney, butter, etc.)
  • nob butter
  • 1/2 medium tomato sliced
  • Some veg – few fine beans, brocolli, peas, thinly sliced courgette, carrot, etc.
  • Splash of olive oil
  • Splash of water or stock
  • Optional – spices like smoked paprika, curry powder, etc.
  • Optional – 1/2 clove garlic sliced
  • Optional – fresh herbs

Fish or meat to top (optional):

  • 1 serving of white fish fillet (cod, haddock, etc.) OR a handful of prawns OR half chicken breast sliced

This will make 1 parcel per person – so get everyone set up to make their own dinner!

Ingredients
  • You need:
  • 1 sheet baking parchment and 1 sheet of foil, both about 18 x 18 inches
  • 1/4 cup beans (cannellini beans, kidney, butter, etc.)
  • Knob butter
  • 1/2 medium tomato sliced
  • Some veg - few fine beans, brocolli, peas, thinly sliced courgette, carrot, etc.
  • Splash of olive oil
  • Splash of water or stock
  • Optional - spices like smoked paprika, curry powder, etc.
  • Optional - 1/2 clove garlic sliced
  • Optional - fresh herbs
  • Fish or meat to top (optional) 1 serving of white fish fillet (cod, haddock, etc.) OR a handful of prawns OR half chicken breast sliced
Directions
  • Step 1 Pre-heated oven 200cFAN
  • Step 2 Lay the foil out flat, then place the baking parchment on top.
  • Step 3 Drizzle with a little olive oil, then top with the beans, garlic, all the ingredient saving the fish or chicken for the very end.
  • Step 4 Finally, season and once all the ingredients are on, bring the sides of the parchment and foil together and twist to seal, using the foil to hold it tight.
  • Step 5 Place on a baking tray in the pre-heated oven for 20 minutes or until cooked through.
  • Step 6 Serve the whole thing in a bowl with some bread to mop up the juices!
