Wednesday 1st April – Homemade Greek Meatballs with Broken Hummus!

INGREDIENTS LIST

This is fun, we’re going to make little Greek meatballs with a kid-easy hummus! The meatballs known by the Greeks as Keftedes are inspired from my book Orexi! 

Serves 4 

What you need:

  • 2 mixing bowls
  • 1 potato masher
  • Frying pan
  • Slotted spoon
  • Fork

Ingredients Greek Meatballs:

  • 500g (approx) mince meat; (ideally lamb or pork, but beef or even vegan mince will work)
  • 1/2 onion, grated / finely diced
  • Herbs, parsley, coriander, mint, even dried
  • 1 average size white potato, grated
  • 1 clove garlic, diced
  • LITTLE flour for dusting
  • Oil for frying
  • Optional – 1 slice bread
  • Optional – 1/2 teacup milk

Ingredients Kids Broken Hummus:

  • 2 tins of white beans (chickpeas, cannellini beans, butter beans, any, or a mix of white beans)
  • Bunch fresh herbs; parsley or coriander or mint
  • 1 lemon
  • 1 clove garlic, crushed
  • Olive oil
  • Optional – Tahini

This will make 1 per person – so get everyone set up to make it that is having dinner!
