My Microwave Mug Recipe for Prawn Saganaki is rich, vibrant and surprisingly delicious!

Traditionally a Greek recipe with tomatoes, prawns and feta, I’ve re-created this traditional dish as a really good microwave mug recipe and boy does it taste good!

Perfect for a quick fix of the munchies or even decanted from the mug into a dish for a really nice starter!

Inspired by the famous prawn saganaki this microwave mug meal takes two minutes to cook, a moment to prepare and is a taste memory to last for years.

There are many ‘saganaki’ recipes in Greek cooking. Saganaki really refers to any dish cooked in a small pan, which is why you can have feta saganaki, halloumi saganaki, in fact you can pretty much have whatever-you-want-saganaki.

I personally love prawn saganaki; traditionally cooked (i.e. not in a mug or a microwave!) it is a deliciously rich dish; what is surprising is how well it comes out cooked in the microwave. If you want a bit of fun and are after some instant gratification (which I usually am, I have the patience of a sinner :)) then this microwave mug recipe is for you.

You can swap the ouzo for wine or even just leave it out altogether but I think a very subtle hint of ouzo works wonders with this dish.

Prawn Saganaki Recipe – Microwave Mug Recipe

Ingredients:

5 jumbo king prawns (butterflied, shelled with the tail left on)

½ cup/125ml passata

½ clove/1tsp grated garlic

1tbl grated onion

Pinch salt and pepper

Pinch sugar

Pinch chilli flakes

Just under 1 tbl/10ml ouzo (can swap for white wine)

1tbl chopped coriander

1/2tsp smoked paprika

1tbl extra virgin olive oil

1tbl feta cheese

Garnish: – extra coriander, feta and drizzle of olive oil

Method:

  1. Add all the ingredients except the feta to a mug and gently combine.
  2. Scatter the crumbled feta on top of the mixture without stirring.
  3. Microwave, uncovered for 2.5 minutes.
  4. Once cooked, let rest for a minute before adding the garnish.

Note – I like to serve mine in a trifle glass!
