Microwave Salmon – Ingredients (serves 1 adult or 2 children):
1/2 tin Marrowfat Peas
1/4 courgette diced into 1/2inch squares
5 baby plum tomatoes cut into quarters
1/2 clove garlic – finely sliced
Squeeze fresh lemon juice
2 tablespoons chopped fresh herbs (parsley, coriander, basil, etc. work well)
1 small fillet of salmon (skinned)
1 green chilli chopped (leave out if making for children!)
Few glugs good quality extra virgin olive oil
Microwave Salmon – Method:
- In a bowl, add the 1/2 tin marrowfat peas (including about 1/2 of the juice), courgette, tomatoes, garlic, herbs and garlic. If cooking this for adults; add the chilli and seasoning, if just for the kids you probably want to leave the chilli out!
- Once mixed together, place the fillet of salmon on top of the vegetables, spoon some of the juice over the top of the salmon and then cheat!
- Cover with clingfilm (pierce with fork a couple of times) and pop into the microwave for exactly 3 minutes. Once done, taste and add the squeeze of lemon and a drizzle of extra virgin olive oil.
Goes well with screaming kids!
