Microwave Salmon – 3 minute Provence Peas & Salmon in the Microwave!

I love this microwave salmon recipe. But can it be true? A healthy, delicious (and cheap) dish cooked in literally 3 minutes? Yes. Welcome to my microwave salmon recipe, one of my favourite kids recipes.

Microwave Salmon – Ingredients (serves 1 adult or 2 children):

1/2 tin Marrowfat Peas
1/4 courgette diced into 1/2inch squares
5 baby plum tomatoes cut into quarters
1/2 clove garlic – finely sliced
Squeeze fresh lemon juice
2 tablespoons chopped fresh herbs (parsley, coriander, basil, etc. work well)
1 small fillet of salmon (skinned)
1 green chilli chopped (leave out if making for children!)
Few glugs good quality extra virgin olive oil

Microwave Salmon – Method:

  1. In a bowl, add the 1/2 tin marrowfat peas (including about 1/2 of the juice), courgette, tomatoes, garlic, herbs and garlic. If cooking this for adults; add the chilli and seasoning, if just for the kids you probably want to leave the chilli out!
  2. Once mixed together, place the fillet of salmon on top of the vegetables, spoon some of the juice over the top of the salmon and then cheat!
  3. Cover with clingfilm (pierce with fork a couple of times) and pop into the microwave for exactly 3 minutes. Once done, taste and add the squeeze of lemon and a drizzle of extra virgin olive oil.

Goes well with screaming kids!
